Homemade Granola
I always wondered why a good quality granola was so expensive to buy, as so one day I decided to make it myself. The great thing about homemade granola is that you can pretty much add any ingredient to it depending on what mood you're in that day or what ingredients you have in your cupboard. Plus, it lasts a while so you can make a batch, keep it in an airtight jar and help yourself to a portion whenever you like.

Why not put the coconut and raisins in the oven with the other ingredients?
The raisins and coconut burn very easily so it's best to add them to the granola fresh. If you did want to toast the coconut slightly, you can add the coconut on the last turn in the oven
Can I replace the oats with other dried grains such as popped quinoa?
To be honest, you can replace each of the dry ingredients with any other dry ingredients, as long as the quantities stay the same, so have fun with experimenting!

Substitute any of the nuts and seeds for other nuts and seeds, or even the raisins for other dried fruit or coconut flakes

Preheat the oven to 160°C/320°F with fan or 180°C/355°F no fan
In a saucepan, combine the oil, maple syrup, honey and vanilla and heat gently until it's become a loose consistency
In a large bowl, add the oats, ground almonds, flaked almonds, flax seeds and pumpkin seeds and mix to combine
Pour the warmed oil, syrup and honey over the oats, nuts and seeds and mix with a spatula until everything has an even coating
Place baking paper onto an oven tray and pour the contents of the bowl onto the tray, spreading it out over the surface of the tray
Bake for 10 minutes
Take the tray out and use the spatula to move the granola around the tray and return it to the oven
Bake for a further 5 minutes
Take the tray out again and move the granola around. Some areas may start to turn golden brown
Repeat this process 2 or 3 more times until all of the granola has an even golden colour
Remove the tray from the oven and allow to cool
Pour the coconut and raisins over the cooled granola and use the spatula to mix through
Fill a large clip jar with the granola and seal shut
The granola will stay fresh at room temperature for up to one month
